Tari Poha Recipe (Nagpur Style)
Ingredients
Poha ke liye
Poha (flattened rice) – 2 cup
Onion – 1 medium (chopped)
Green chilli – 1–2 (chopped)
Curry leaves – 6–7
Turmeric powder – ½ tsp
Salt – as per taste
Lemon juice – 1 tbsp
Fresh coriander – garnish ke liye
Oil – 2 tbsp
Tari (Curry) ke liye
Kala chana / safed chana / matki – 1 cup (overnight soaked)
Onion – 1 large (chopped)
Tomato – 1 large (chopped)
Ginger-garlic paste – 1 tsp
Red chilli powder – 1 tsp
Coriander powder – 1 tsp
Garam masala – ½ tsp
Salt – as per taste
Oil – 2 tbsp
Water – 2–3 cup

Method
Step 1 – Tari (Curry) banayein
1. Pressure cooker me chana/matki ko thoda namak ke saath 3–4 whistle tak boil karein.
2. Ek kadhai me oil garam karein, onion fry karein jab tak golden brown ho.
3. Ginger-garlic paste dalke 1 min bhunein.
4. Tomato, red chilli, coriander powder, garam masala dalke 3–4 min bhunein.
5. Boiled chana/matki dalke mix karein, paani dalke 5–6 min tak halki flame par boil karein.
6. Tari thodi patli honi chahiye — poha ke saath easily soak ho sake.
Step 2 – Poha banayein
1. Poha ko 2 bar pani me dhoke chhan lein.
2. Kadhai me oil garam karein, curry leaves, green chilli, onion dalke soft hone tak fry karein.
3. Turmeric & namak dalke mix karein.
4. Poha dalke halki flame par 2–3 min toss karein.
5. Gas band karke lemon juice & coriander garnish karein.
Step 3 – Serve karein
Plate me poha lein, upar se garam tari daalein.
Upar se finely chopped onion, sev, coriander aur lemon squeeze karke serve karein.
