विधि (Method):



1. आटा गूंथना


एक बाउल में गेहूँ का आटा लें, उसमें थोड़ा नमक डालें और पानी डालकर नरम आटा गूंथ लें।


10–15 मिनट ढककर रख दें।




2. भरावन (Stuffing) तैयार करना


उबले आलू छीलकर मैश करें।


उसमें हरी मिर्च, हरा धनिया, अदरक, लाल मिर्च पाउडर, गरम मसाला, अमचूर और नमक डालकर अच्छी तरह मिला लें।




3. पराठा बेलना


आटे की एक लोई लें, हल्का बेलें।


बीच में आलू की भरावन रखें और चारों तरफ से मोड़कर बंद कर दें।


अब हल्के हाथ से बेलकर पराठा बना लें।




4. पराठा सेंकना


गरम तवे पर पराठा रखें।


दोनों तरफ से तेल/घी लगाकर सुनहरा और कुरकुरा होने तक सेंकें।




5. परोसना


गरमागरम आलू पराठा दही, मक्खन या अचार के साथ परोसें।
